《Food Control》:Impact of HACCP implementation on microbial contamination in poultry meat in Ho Chi Minh City, Viet Nam: A culture-based assessment supported by exploratory 16S rRNA sequencing
越南胡志明市家禽供应链中HACCP实施对微生物污染的影响研究。通过540份样本分析(含TAMC、大肠杆菌、沙门氏菌及弯曲杆菌检测),发现HACCP企业显著降低终产品微生物污染(TAMC 2.32 vs 7.85 log CFU/g;沙门氏菌16.7% vs 66.7%),并利用16S rRNA测序发现非HACCP企业样本微生物多样性更高,提示腐败途径差异。研究证实HACCP对提升肉品安全有效,建议强化政策执行与技术创新。
